Ingredients

  • 12 large scallops
  • 200 g mixed seafood (clams, mussels and shrimps)
  • 2 tablespoons extra-virgin olive oil
  • 50 g unsalted butter
  • 2 garlic cloves, minced
  • Juice and zest of 1 lemon
  • 2 tablespoons chopped fresh parsley
  • Salt and freshly ground black pepper
  • Lemon slices for garnish

Preparation

  1. Clean and prepare the seafood: Clean the shells and rinse the scallops under cold running water. Pat dry with paper towels.
  2. Cook seafood: Heat a tablespoon of olive oil in a large frying pan over medium heat. Add the clams, mussels and shrimps. Cook until the shells open and the shrimp turn pink, about 5 to 7 minutes. Remove from heat and set aside.
  3. Sear the scallops: In another pan, heat the remaining oil over high heat. Add the scallops and sear for about 2 minutes on each side, or until golden and cooked through.
  4. Prepare the lemon herb butter sauce: Reduce the heat to low and add the butter and garlic to the scallops. Sauté for 1 minute, then add the lemon juice, zest and parsley. Season with salt and pepper.
  5. Combine and serve: Add the cooked seafood to the scallops and toss gently with the sauce. Serve immediately, garnished with lemon slices and additional parsley.
