Ingredients
- 300 g paella rice

Preparation
Sofrito:
- In a large paella pan or sauté pan, heat the olive oil and sauté the onion and garlic until translucent.
- Add the peppers and cook for a few minutes. Stir in the chopped tomatoes and paprika, and cook until the mixture has melted.
Cooking rice and seafood:
- Add the rice to the frying pan and stir so that it soaks up the sofrito. Pour in the hot fish stock mixed with saffron.
- Arrange the seafood harmoniously on top of the rice. Do not stir from this point onwards.
- Cook over medium heat for around 18-20 minutes, until the rice is tender and the liquid absorbed.
Finishing:
- Five minutes before the end of cooking time, add the peas.
- Remove from heat and cover with aluminum foil. Leave to stand for 5 minutes to allow all the aromas to mingle.
